iLola’s patio

In a corner of Andalusia, Lola had a secret and a habit: the recipe she kept to herself; the olives, she shared.

She had chosen the Gordal for its generosity. Large, fleshy and pitted, it had the kind of presence that makes you look before you taste.

She prepared it with a recipe of her own, a mix of flavours that raised questions and left few answers.

But her most personal touch came afterwards.

ivThe oil

Lola drained the olives and began her ritual: the scent of oregano, the character of garlic, the taste of red pepper and the embrace of olive oil. She let the familiar aromas meet in an artisan marinade, so that every ingredient left its mark.

vTo the table

She brought them to the table without brine, dressed in the shine of the oil, among cloves of garlic and pieces of pepper. The herbs clung to every olive. Before the first bite, temptation was already served.

viThe first bite

First came the aroma. Then the generous flesh of the Gordal. And then the nuances of the dressing, and that depth of flavour no one could quite work out.

Whenever someone asked for the recipe, Lola smiled and moved the bowl closer:

“Try another.
See if you can work it out.”

And between one guess and the next, a hand reached for one more olive.

That was Lola’s sin: keeping the secret of a temptation she loved to share.
